I'm Dreaming of White Christmas Popcorn

Each Christmas I make up batches of White Christmas Popcorn. It has become a tradition. Everybody gets some; co-workers, neighbors and even the UPS driver. It’s my go-to, favorite Christmas treat to make.

It’s so quick and easy it is to make. It has only two ingredients and you can make it in the microwave.  But truly, better than the simplicity is the yumminess.  Who would have guessed that white chocolate covered popcorn would be so fantastic? I attribute the adoration to a combination of low expectations paired with the gratifying balance of sweet and salty, the unexpected velvety texture and finished off with the light airy crunch of addicting popcorn.

As promised, here is the recipe.  

WHITE CHRISTMAS POPCORN

Ingredients:

·         1 bag of gourmet white microwave popcorn

·         3 oz (or 3 squares) of Vanilla Almond Bark

·         Colored sprinkles (optional)

Instructions:

1.       Spread out a large piece of wax or parchment paper on the counter.

2.       Pop bag of popcorn in the microwave according to the directions.

3.        Shake the bag of popcorn so that all the un-popped kernels settle to the bottom of the bag. Gently transfer only the popped corn from the bag into a large bowl. Throw out the un-popped kernels.

4.       Place the squares of vanilla almond bark into a microwave-safe bowl. Microwave at 70% power 2 minute. Stir thoroughly being sure to scrape the sides and bottom of the bowl. If candy is not completely melted, microwave for another 15-30 seconds and stir again. Repeat this process until the white chocolate is completely melted and smooth.

5.       Drizzle melted almond bark over the popcorn and toss until popcorn is evenly coated.

6.       Spread the popcorn over the wax/parchment paper (optional: sprinkle with green and red sprinkles if desired).

7.       Let it cool.

8.       Once cooled and the white chocolate has hardened you can break the chunks apart and store in a sealed baggie or airtight container until ready to serve.
